Old Major Foie Brats are a special treat! We use Indiana pork, seasoned with our own blend of spices and then double grind with a ton (not literally) of Foie Gras. Thaw these beauties in the fridge and slowly cook in the oven, or sous vide until the sausage are 145 degrees. Then finish on stovetop in your favorite pan on medium heat while continuously basting with butter. Serve with some fig jam if you want to kick it up another notch!
