Our beef grew up on a small Indiana Farm where it spent it’s life outside at pasture eating wild grasses. The beef was then fed grain for six months to supplement it’s grass diet. Grain-finishing a beef adds additional fat and flavor to the meat and we like that! Beef Plate is a section of the beef belly that connects to the short rib. This the short rib is removed and the plate is then trimmed up. Beef bacon made from the plate looks a lot like pork bacon! We dry cure our beef bacon in the same manner as our pork bacon and then it is heavily smoked on hickory which give it that smokey bacon flavor we all love!
This bacon isn’t like pork bacon. The slices are much bigger! Pan fry to your preferred crispiness and enjoy every day.
